Abbot's Cellar

Abbot’s Cellar is a farm-to-table restaurant at the forefront of the beer pairing movement. Housed in a historic base building, Abbot’s intends to showcase the rustic character of the original space, while providing an elegant environment for patrons to taste a world-class beer collection that honors age-old brewing traditions originated in monasteries centuries ago.Formerly a garage, the space boasts 24’ wood ceilings and a large wall built from bricks reclaimed after the 1906 earthquake. To create a seamless transition between old and new, material choices for the build-out were reclaimed or recycled whenever possible, including: reclaimed barn wood, recycled denim insulation, high-recycled content steel, and recycled beer bottles as aggregate in the cast-concrete sink basin. The weathered feel of the palette is juxtaposed by careful detailing throughout. The barn wood walls transition into walnut slatted banquettes; break form steel covers the hood in the open kitchen and flows into the adjacent glass display. The bar is set off with a sleek cast-concrete countertop.To showcase Abbot’s dedication to beer, special attention was placed on particular elements of the space. A two-story stone cellar keeps bottles at the optimal temperature and doubles as a display for rare brews. The extensive collection of glassware, specific to each beer served, lines up-lit shelves behind the bar, creating a light sculpture that pulls patrons through the rectilinear space. Diners are encouraged to peruse texts about food and beer at the book ledge integrated into the chef’s counter. A local wood-worker fabricated the custom dining tables with the beer menu integrated into the top (providing constant access throughout the meal).Ultimately, the goal was to create a space that fits the image and values of the owners.
